Radish Pico de Gallo
In a bowl combine all ingredients and mix well, enjoy! Feel free to add more ingredients as you desire!
A favorite meal in our household is a sweet potato taco. Which is just a baked sweet potato topped with any choice of ground meat and all the taco toppings you love!
For this particular meal I seasoned ground bison in my cast iron skillet (this is so yummy with venison but we're currently out) and chopped up cherry tomatoes, green onion, cilantro, jalapeno, and smushed up some avocado for a quick guacamole. I finished off my taco with some Cotija cheese, my favorite Taco Bell Verde Salsa, and of course the radish pico!
